Coriander has bright green feathery leaves and it has delicate round projections. The flowers are small, white and pale pink, which turn into green seeds, and eventually turn brown or brownish gray. It grows 2 to 3 feet.

The seeds produce colourless or pale yellow oil by steam distillation.
It has a fresh, sweet spicy, woody, slightly balsamic scent. About 45 pounds of seed produce one pound of oil.
Also known as Chinese Parsley or Cilantro. Latin name is Coriandrum Sativum, a member of the Apiaceae family.

It is native to Morocco and the Middle East. Now it is grown in India, North Africa, Russia, South America, Southern Europe and Western Asia. Highest oil producing areas are Romania, Russia and other former Soviet Republics. Coriander also has a leave oil available. It is not as strongly scented or as sweet, and greener.
