German chamomile (Matricaria Chamomilla or Matricaria
Recutita) is similar to Roman chamomile, except taller. It is an
annual plant, grows to 2 feet tall. The flowers have smaller heads
and fewer petals. It was once native to Europe, and parts of Asia.
Today it grows in Eastern Europe, Egypt, North America and in some
areas of former Soviet Union.
It has been called Blue Chamomile. Its colour comes from a high
content of azulene, a chemical component which is produced from
the distillation process. It also has a strong anti-inflammatory
action. The scent is stronger than Roman Chamomile. It has a sweet,
slight fruity, slight spicy scent. It has almost an exciting scent.
Chamomile Mixta or Moroccan Chamomile (Anthemis Mixta) is a distant relative to the others. It does not appear as the others in similarity. It has hairy leaves and tubular yellow flowers. It is native to Northwestern Africa, Southern Spain, Egypt, Israel and Morocco. It has a spicy, fresh scent, with a balsamic undertone.
